Designed and built full-stack AI SaaS platform: 142 React components, 31 API routes, 14 database tables, 2 AI pipelines (Anthropic Claude for scientific reasoning, Google Gemini for document extraction). Curated 15,400+ structured reference entries (EU additives, novel foods, health claims, allergens, functional ingredients, unit operations) as the platform's knowledge layer. Translated complex R&D workflows into AI-powered use cases: formulation scenario generation, ingredient relationship exploration, regulatory compliance checking, and cost optimisation. Developed three-lens architecture serving ingredient suppliers, co-manufacturers, and brands from a single platform - each lens adapted to distinct user workflows and business questions.

Spearheaded end-to-end operational, innovation and food-tech brand scale-up from concept to full operation. Initiated and architected Haleo AI, a proprietary AI platform to optimise product R&D cycles - integrating formulation trial optimisation, consumer insights, sustainability goals, and market intelligence. Defined use cases, designed workflows, and drove internal adoption. Built in-house R&D lab from scratch, establishing protocols and leading innovation through full lifecycle from concept, product development and prototyping, technical process applications to commercial launch. Supported fundraising activities, securing €8 Million in total raised capital through strategic pitch deck development and effective investor relations. Supported commercial growth, expanding retail distribution to over 4,000+ high-volume retail accounts within three years. Defined and executed long-term business plan, operational strategy, and coordinated cash flowcmanagement and comprehensive budgeting. Established brand identity, tone of voice, and mission framework.
